The original Cavalry vineyard was part of a much bigger property but today the property is made up of 35 acres of vines and 70 acres of grazing land, which is surrounded on three sides by Pukapunyal army base. The structure of the property is that the previous owners planted a number of fruit trees alongside the vines and within the vineyard. These fruit trees provide some interesting nuances.
The grapes for this wine are picked in the area of the vineyard closest to a long line of mature Fig trees which is why we explain the taste of this wine as “fig jam”. Each year we pick the best four barrels from this area and this is what makes this wine, so supplies are always limited. The grapes are all hand picked and treated most carefully.
Tasting Note:
A bright dark red black hue when first poured the aromas are of elevated spicy black cherry and liquorice scents infused with blackpepper and a subtle smoky vanillin cedar note. Deeply fruited the elegant palate is layered with rich black cherry, liquorice and plum flavours which have a spicy overtone. It clearly exhibits gently smoked vanillin cedar, with traces of spice. There is a velvet like mouth feel to the wine with a refined yet complex tannin structure provides ample opportunity for longer term cellaring. Excellent depth with a long black fruit infused after taste which shows plenty of persistence.
Drink over the next 6-10 years (2020-2030).
